一、食譜計算的目的

通過食譜計算瞭解膳食中平均每日攝取的各種營養素是否符合我國制定的營養素供給量標準。以瞭解居民健康狀況,或根據病人的病情為臨十床十營養治療提供依據。

在計算時,應以5~7日的膳食,算出每人每日平均攝取量,因為每日的膳食都能達到標準要求是困難的。

以糖尿病人一日食譜進行計算,學會食譜計算的方法。

二、計算和評價的內容

1.計算各種食物中營養素的含量(實十習十表4-1);

2.三餐熱能分配(實十習十表4-2);

3.熱能來源及百分比(實十習十表4-3)

膳食計算實例

下列一日食譜系某醫務工作者為糖尿病患者所編制的,計算其所供給的營養素含量,並加以討論評價。

患者張三,男,45歲,身高170cm,體重71kg,辦公室工作。

早餐:饅頭,粥,炒牛肉

標二?米50g 富強面粉75g

瘦牛肉50g 豆油5g

午餐:面條,炒肉絲,豬肉燜扁豆

富強面粉15g 瘦豬肉95g

扁豆120g 豆油10g

晚餐:米飯,肉絲炒芹菜,菠菜豆腐湯

標二秈米150g 瘦豬肉50g

芹菜150g 菠菜100g

豆腐200g 豆油10g
